I'd say Loveland pretty well crushes nearly anything in the east (assuming decent snow year). Steeper steeps in sections off chair 1, quite a bit of bowl/above treeline, and no rain events to muck up the surface conditions every month (or even more frequently back east at times).
That said, for Eldora I would give it a qualified "It depends on the year". Such as last year, Eldora was not only better than anything east, but better snow conditions than nearly anything in Colorado too - certainly better snow than central CO mtns had (Eldora has some surprisingly good steeps in the glades, but no open bowls and respectable sized 1600 verts). Not that anyone who didn't ski Eldo a lot last year would likely believe that statement (but for the locals it's the snow year everyone will talk about for a long time). Even this year the snow has been decent and no rain events like the east gets so probably about as good as most places back east (for a mid-size place). Definitely not as good as rest of the west has been this year though. But there are plenty of years - probably about 40-50% of my 11 seasons there - that you might as well be skiing back east as you are skiing pretty much snowmaking only (or so it seems).
I'm sure I'll get some disagreement with the above, but that's still my 2 cent opinion/perception (I've been to something around 85 different ski areas, but not to the well over 100 of others on this board).
