Water chemistry can be pretty easily adjusted (assuming you have a sample or specification of the target water), but elevation - that's what makes NY style bagels impossible here, Denver, et al. Yes, people have experimented with pressure cooking them, but with very limited success.
 
Sadly I don't eat them anymore, not much pizza either..all contributing to the recent 20 lb weight loss...oh..and I gave up...beer...that one was tough...not that I won't partake here and there...
