Gunstock actually has quite nice night skiing (I was just up there tonight actually). They claim the biggest night skiing operation in NH, and from what I've seen, they're probably right. For those who know the mountain, they've got:

Tiger, Ramrod & Pistol lifts open for night skiing, with most trails off these lifts open (they also like Gunshy open, but that doesn't really count in my book).

But the big mountains in NH & VT don't really have night skiing. The reason? They're way too far from a population center to get enough people to make it worth-while. Down south in Mass, etc, you've got enough population density that plenty of people can go up after work/school. At Gunstock you've got Gilford & Laconia, so a lot of kids come up after school, and adults after work.

However, think about places like Sugarloaf (middle of no-where), Jay, Sugarbush, etc... Except for Burlington, they really don't have many large towns within 30 min of them, and this is probably the reason they don't have night skiing.
